BACON CHEDDAR RANCH POTATO SALAD




We love potato salad, and truly we have nothing against mayo, but if you’re looking for a comforting potato salad free from it that will leave you satisfied, look no further. This Bacon Cheddar Ranch Potato Salad is exactly that. We used a healthy homemade ranch dressing made with Greek Yogurt, but we also have a vegan version as well. This would be so good alongside your favorite BBQ fixing this summer.

BACON CHEDDAR RANCH POTATO SALAD


INGREDIENTS

1 lb golden potatoes, diced into 1-inch cubes

1 tsp olive oil

5-6 cups bacon

1 cup shredded cheddar cheese

3 green onions, thinly sliced

1/2 cup healthy homemade ranch dressing, more as desired


Add the potatoes to a large pot of water and bring to boil. Once boiling, lower to a medium simmer and cook for about 7-9 minutes or until the potatoes are tender but not mushy or breaking apart. Test with a fork.


Meanwhile, heat a cast-iron skillet over medium heat. Add olive oil and 5-6 strips of bacon. Cook for 3-5 minutes, flip and cook until the bacon is crispy, about another 3-5 minutes. Set aside on a paper towel to drain and crisp up further. Crumble into bits.


Then drain the potatoes and add them to a large bowl with the cheese, bacon bits, green onion and ranch. Mix well to combine. Enjoy!
