Smash Tacos are having a serious moment and we wanted to get in on the action and combine some of our favorite flavors into an epic taco.
Buffalo, chicken and ranch are a classic combination for chicken wings and bar food, and it is just as good when turned into a smash taco.
Buffalo Chicken Smash Tacos in a cast-iron
With Cabbage Ranch Slaw and Bread & Butter Pickles
Chicken
1 lb ground chicken
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cumin powder
2 Tbsp buffalo sauce (ingredients below)
½ tsp salt, more to taste
Freshly cracked black pepper
Buffalo Sauce
3/4 cup Franks Red Hot (or other hot pepper sauce)
½ cup unsalted butter
1 ½ Tbsp apple cider vinegar
1/2 tsp Worcestershire sauce
Salt to taste
Cabbage Slaw
¼ head green cabbage, thinly shredded, preferably on a mandolin
¼-½ cup healthy homemade ranch dressing
Tacos
Corn or flour tortillas
Bread and butter pickles
Sliced chives to garnish
Directions
To make the chicken, combine everything in a bowl and mix well to combine.
To make the buffalo sauce, combine everything in a small saucepan over low heat, mix everything well to combine.
To make the cabbage slaw, add the cabbage and ranch to a bowl, and mix well to combine.
To make the tacos, heat a large cast iron skillet over medium-high heat. Add a touch of oil if your cast iron is not well-seasoned. Scoop approximately ⅓ cup chicken mix into cast iron, grab a tortilla, and place it on top before smashing it down with your hands or the bottom of a pot. Let sizzle and cook for about 2-3 minutes before flipping over to warm the tortilla. Remove from the heat, drizzle with some buffalo low sauce, and add pickles and slaw. Repeat for the remaining chicken.
Makes approximately 6 tacos.
