PICKLED GRILLED CHEESE - TWO WAYS



Did you see those viral pickle wrapped cheese things from last year that were floating all over the internet? You lay a piece of cheese on a frying pan, put a pickle on it, then roll the cheese over the pickle. We never tried it, but it did inspire us to make some pickle grilled cheese.

We tried out two different versions. First with pickled jalapeno and bread n butter pickles - so a spicy and sweet combo. Second with just dill pickles. For both sandwiches we used provolone and sharp white cheddar. We picked up a fancy loaf of freshly made sourdough bread from our local bakery down the street and used mayo on the outside of the bread to get it golden brown.




PICKLED GRILLED CHEESE - TWO WAYS


Sweet & Spicy (Jalapeno & Bread n Butter Pickles)

butter

1 tbsp mayo

2 slices of thick rustic sourdough bread

2 slices of provolone cheese, sliced into strips

1/2 cup shredded sharp white cheddar cheese

1/4-1/3 cup pickled jalapeno's

1/4-1/3 cup bread n butter pickles



Dill Pickle

1 tbsp mayo

2 slices of thick rustic sourdough bread

2 slices of provolone cheese, sliced into strips

1/2 cup shredded sharp white cheddar cheese

1/4-1/3 cup dill pickles



Directions:

Spread the mayo on one side of each piece of bread. In a skillet over medium heat, melt some butter and then put one piece of bread mayo side down. Add the provolone cheese, then the pickles (and jalapeno), then add the other cheese on top, then the next piece of bread, mayo side up. Flip the sandwich until its golden brown on both sides and the cheese has melted, about 10 minutes. Slice in half and enjoy.
