SUPREME PIZZA INSPIRED PESTO CHICKEN SALAD




Let's make a Supreme Pizza-inspired Pesto chicken salad. It's basil season, after all. Whip up a big batch of pesto, roast up some red onion, green bell pepper, and mushrooms, coat with oil, black pepper, and salt, and toss in the oven. Then shredded up a whole rotisserie chicken, And since it's Supreme pizza inspired, we gotta slice up some black olives. When the veggies are done, add them to the bowl with the chicken, olives, and generous dollops of pesto, mix them all together, and dig in. Seriously this is so good and great as a meal prep item.




Supreme Pizza Inspired Pesto Chicken Salad


It's a mouthful. In every way. PESTO 2 cups packed fresh basil 3 Tbsp pine nuts or walnuts 3 large cloves garlic 2 Tbsp lemon juice, more to taste 3-4 Tbsp nutritional yeast salt to taste 1/4-1/2 cup extra virgin olive oil, more to desired consistency. You want a thick but pourable sauce. Add everything but the oil into a food processor, pulse until crumbly, then stream in the oil. Taste and adjust.


SUPREME PIZZA PESTO CHICKEN SALAD 1/2 diced red onion 1 diced green bell pepper, seeds removed 8 oz sliced cremini mushrooms olive oil S&P 1 rotisserie chicken, shredded 1-15oz can black olives, drained and sliced red pepper flakes, optional Preheat oven to 350f, lay out the red onion, bell pepper, and mushroom on a baking tray, generously coat with oil, salt, and pepper, toss well and roast for 15-17 minutes until tender and cooked through. Add the shredded rotisserie chicken to a large bowl, and add the cooked veggies, olives, and half the pesto. Adding more if desired. We took this to an outdoor music concert and made Italian-inspired nachos and breakfast tacos with it. So good and versatile. We hope you love it.
