SUPREME PIZZA SALAD - LIKE THE PIZZA BUT AS A SALAD



If there is one thing that almost everyone loves, it's pizza. But eating pizza every day is probably not the healthiest thing to do, so we decided to turn one of our favorite pies into a salad.


Needless to say it was damn good. It's not a pizza, but for what it is (a salad) it's delicious. As we were editing the YouTube video for this, we were talking about how we want to make it again soon, that's how much we enjoyed it.



This has all the usual toppings that are on a Supreme Pizza, like pepperoni, sausage, onion, mushroom, green bell pepper, olives, and cheese.


We made a fragrant basil tomato vinaigrette and garlic, oregano, butter croutons with fresh sourdough bread.


Seriously, this is one hell of a salad.



SUPREME PIZZA SALAD


INGREDIENTS:


TOMATO BASIL VINAIGRETTE:

  • 2 roma tomatos, seeds removed

  • 2 cloves garlic

  • 2/3 cup loosely packed basil

  • 1/4 cup red wine vinegar

  • 1 tbsp dijon mustard

  • 3 tbsp aged balsamic vinegar

  • 1 cup olive oil

  • Salt and black pepper to taste


ROASTED VEGGIES:

  • 1/2 diced yellow onion

  • 8 oz sliced cremini mushrooms

  • 1 diced green bell pepper, seeds and membrane removed

  • 2 pressed cloves of garlic

  • olive oil

  • Salt and pepper to taste


BUTTER, GARLIC, SOURDOUGH CRUTONS:

  • 2 cups cubed sourdough bread, preferably freshly made

  • 1/2 cup melted butter

  • 3 pressed cloves of garlic

  • 1 tsp Oregano

  • Salt and pepper to taste


TO FINISH:

  • 2 Italian sausages, casing removed, cut into bite size pieces, then cooked

  • 1 cup sliced black olives

  • 1 cup sliced pepperoni

  • 2 sliced of provolone cheese cut into cubes

  • 2 chopped hearts of romaine

  • 3-4 handfuls fresh arugula

  • freshly grated Grana Padano cheese

  • Crushed red pepper

  • Fresh basil to garnish, optional



DIRECTIONS:


Pre heat the oven to 350f (180C)


Make the vinaigrette. Add everything but the olive oil, salt and pepper to a food processor. Turn on high and blend until mostly smooth. Scrap down the sides if needed. Then while the processor is on low, drizzle in the olive oil. Season with salt and pepper to taste. Set aside.


Next, prep the onion, mushroom and bell pepper. Lay out the veggies in a single layer on a large baking sheet. drizzle with olive oil, salt and pepper. Bake in the oven for about 20-25 minutes.


Then add the cubed bread onto a baking sheet. Pour over the butter, and add the oregano, salt and pepper. Bake in the oven for 15 minutes or until gold brown, tossing halfway through. They will crispy up even more once removed from the oven.


Assemble the salad by adding the romaine, arugula, roasted veggies, cooked sausage, olives, pepperoni, provolone cheese, and croutons to a large bowl. Add half of the dressing to start. Mix well until evenly coated. Decide if you want to add more dressing. Shave on Grana Padano cheese, garnish with crushed red pepper flakes and fresh basil. Enjoy.
